Crispy Kale Chips

Love the smell of popcorn but not a big fan of the empty and nutritionally deficient calories and insulin spiking carbs?  Try these Crispy Kale Chips instead. They're super easy to make: de-stem, tear into 1- 2 inch pieces, rinse, toss in a little olive oil and sprinkle with sea salt, toss on a sheet pan, place in a pre-heated oven (250-275F) and cook until crisp. Done.

The nutritional benefits of kale, the king of the dark leafy greens, are seemingly endless: phytonutrients, carotenoids, pro-vitamin A, detoxifier, vitamin C, anti-inflammatory, manganese, fiber and vitamin E to name a few.  Make sure you choose organic.
